After a week of waiting for test results and making sure we have reached the perfect balance between aromas and acidity the grape picking has finally started. It took twelve hours of labour to get all the grapes picked in cool temperatures and create the optimal blend after pressing directly. Now it is time to let the partial fermentation take place before bottling in three weeks time. Our team is now ready (even a little impatient!) to get to work on the dry whites in roughly ten days. That will be the beginning of a two month race to pick all of the different plots and get the vinification process finished for this 2018 harvest which is already looking, as the French say, “magnifique!”.
