AOC Bergerac Sec (dry white)
The terroir is clayey-limestone, with limestone from the Aquitaine. The vineyard is set upon a bedrock largely composed of limestone, therefore giving the wines a generous mineral touch. On top, a layer of clay can be found, which feeds the wine with strength & complexity.
50% Semillon, 40% Sauvignon-10% Muscadelle
The bunches are destalked, the grapes are then left to macerate for 48 hours. A natural clarification occurs at a cold temperature of 7°C, without enzymes. The fermentation takes place in stainless steel temperature-controlled vats at 18°C, with macro-oxygenation and stirring of the lees throughout the 8 months of ageing. Bentonite (clay) is used for fining, and filtration is minimal.
The Cuvée des Conti is the perfect expression of Semillon, picked very ripe & slightly dried. It offers an incredible aromatic complexity and a flawless balance of roundness & freshness in the mouth. Boasting a shiny pale gold colour, it gives off aromas of acacia & orange flowers and white peach.
